We either have to many bananas or not enough, depending on who has been through my kitchen. I had gotten to the point where I had frozen enough for baking and smoothies but I hated tossing them after they had gone brown. I found a solution that actually works, though it is a bit of effort. There is something about a gas that is produced from the stem when the bunch is cut from the tree. Leaving the bananas connected and next to each other causes this gas to be released which accelerates the ripening. To avoid this, separate your bunch and wrap each one in a piece of plastic wrap. And I kid you not, they will last for the week or beyond…here is the proof!
